Dried mint, refreshing and warming at once with a soft sweet aroma, one of the most widely used spices in Turkey and the world. Native to the Mediterranean basin and grown today in most temperate regions, it falls mainly into two groups: wild green mint with thin leaves used in dishes, and sharp mint with thick dark leaves used in sweets, gum and toothpaste. Fresh or dried it aids digestion and is combined with yoghurt in Eastern cuisines including Turkish. Best harvested just before flowering when the essential oils peak, then dried hanging in bunches in a dry, well-ventilated place.
